🏆 Young Gun of Wine Best in Blind List: Best Blanc de Blancs in Australia 🏆
👨🏫 Mentored by Dr. Tony Jordan, Legendary "Godfather of Australian Sparkling Wine" 👨🏫

Region: King Valley, Victoria
Variety: 100% Chardonnay

About the Wine
In 1998, David & Sharon Burder planted 8 hectares of Chardonnay (clones I10V1 & 76), 5 hectares of Pinot Noir (clones 114, 115 & MV6—the most prized clones in Burgundy Grand Crus), 2 hectares of Pinot Gris, and 1 hectare of Pinot Meunier. Perched at an altitude of 870 meters, it is one of the highest vineyard sites in all of Australia. In 2008, their daughter and current proprietor, Clare Burder, founded Eminence Wines. To craft a world-class sparkling wine capable of standing shoulder to shoulder with elite French Champagne houses, Clare invited Dr. Tony Jordan—former Global Winemaker for Moët & Chandon and revered as the "Godfather of Australian Sparkling Wine"—to personally join the project. Drawing on decades of Champagne expertise, Dr. Jordan worked side-by-side with Clare to fine-tune the secondary bottle fermentation and final assemblage, giving rise to the iconic "The Assembly" series (Zhen Cui, meaning the finest essence of distinction and pedigree).

Vinification
The majority of the fruit was sourced from the estate's high-altitude vineyards on the Whitlands High Plateau. Grapes were hand-picked and gently whole-bunch pressed to ensure optimal purity and finesse. Primary fermentation took place in seasoned neutral oak casks with indigenous yeasts and zero added sulfur dioxide, putting raw terroir expression front and center. The base wines matured on fine lees in oak for approximately 11 months prior to blending. Following secondary fermentation, the wine spent 24 months aging on lees in bottle before disgorgement, finished with zero dosage to preserve its pristine bone-dry profile.

Tasting Notes
Silky and refined on the palate, driven by vibrant, fine-beaded effervescence framed by a tight, razor-sharp spine of acidity. Gentle swirling unlocks layered notes of white peach, citrus, freshly baked brioche, crisp apple, and orange zest, underscored by crushed-stone minerality and a savory lick of salinity that sustains remarkable tension. Precise, structured, yet effortlessly dynamic, its unadorned purity makes it undeniably one of the finest Chardonnay sparkling wines produced in Australia at its price point.

Food Pairing
Fresh oysters, pan-seared scallops, or Cantonese-style steamed fish.
