Characteristic
Terroir:<br/>The vineyard is located in the village of Mercurey, which is famous for red wine production in the Chalon Côte. It is on the southeastern slopes. It is not affected by the Mist wind from the north, which helps the grapes to fully mature. The soil is composed of clay and limestone.<br/><br/>Winemaking:<br/>After the grapes are manually harvested, they are screened and destemmed, and then fermented in large vats for 15 days. The fermented wine is aged in different types of oak barrels for 11-12 months according to the degree of pressing. Month, the usage rate of new barrels is 50%, and the rest are put into old barrels of 1-3 years for aging, and finally blended in appropriate proportions.<br/><br/>Tasting Note:<br/>With a ruby-like translucent color, it exudes the aroma of cranberries and ripe berries, as well as a little clove and delicate white flowers. The wine is medium-bodied and has a light and elegant taste, with a hint of restraint and complexity from the old vines.
