Characteristic
One-third of the grapevines are over 50 years old, while the rest are distributed between 15 to 20 years of age.<br/>During grape harvest, a first round of selection takes place in the vineyard, followed by a second round of selection at the winery, using a two-stage table for manual sorting.<br/>Fermentation occurs in stainless steel small tanks at 26°C, with an 18 day maceration period.<br/>The wine is aged for 10 months in French oak barrels, and no filtration is applied.One-third of the grapevines are over 50 years old, while the rest are distributed between 15 to 20 years of age.
