LEAVES COFFEE ROASTERS’ Yasuo Ishii Takes the Stage with ORIGAMI PINN, While the Limited-Edition “sabi” Makes Its International Coffee Show Debut
TAIPEI, TAIWAN — What makes a great cup of coffee? The beans, the roast, the brewing technique—or the tool that brings them together?
At this year’s International Coffee Exhibition, Yasuo Ishii of LEAVES COFFEE ROASTERS will take the stage for a special live brewing demonstration featuring the ORIGAMI × LEAVES COFFEE ROASTERS PINN Dripper. At the same exhibition, ORIGAMI’s limited-edition Dripper S “sabi” will make its featured appearance, bringing together Japanese coffee craftsmanship, thoughtful brewing design, and the aesthetics of Japanese ceramics.
More than a product presentation, the event offers visitors an opportunity to experience Japanese coffee culture firsthand and discover how thoughtful dripper design can influence the way coffee is extracted, perceived, and enjoyed.
A Collaboration Built Around One Question: What Makes the Ideal Cup?
The PINN Dripper was born from a collaboration between ORIGAMI and LEAVES COFFEE ROASTERS, driven by Yasuo Ishii’s philosophy of creating “more freedom, more deliciousness” in hand-drip coffee.
Rather than simply creating another coffee dripper, the collaboration reconsidered how the shape, angle, ribs, and water flow of a dripper could help reveal the potential of the coffee bean.
The result is PINN—a dripper designed to provide a more intuitive brewing experience while allowing a broad range of flavor expression.
PINN: Designed for Fast, Precise Extraction
The PINN Dripper features a 55° angle designed to create a smaller coffee bed, helping hot water reach the grounds efficiently.
Its carefully engineered rib structure and 28 mm bottom opening are designed to support efficient water flow while reducing excessive water retention.
PINN is designed around a short extraction time of approximately 90 seconds, with a focus on bringing out aroma, sweetness, and acidity. Its design is particularly well suited to showcasing the delicate characteristics of light-roasted coffee.
The philosophy is simple:
Not to control the flavor, but to let the coffee reveal more of its own character.
Experience Yasuo Ishii’s Brewing Philosophy Live
The highlight of the event will be a live brewing demonstration by Yasuo Ishii, allowing visitors to observe his approach to coffee preparation firsthand.
From grind size and water flow to pouring technique and extraction time, Ishii will demonstrate how brewing decisions interact with the design of PINN to shape the final cup.
Visitors will have the opportunity to discover:
- How PINN’s 55° geometry influences the brewing process
- How its rib structure supports efficient water flow
- How short extraction can contribute to clarity and balance
- How brewing technique can influence aroma, sweetness, and acidity
- The philosophy behind the collaboration between ORIGAMI and LEAVES COFFEE ROASTERS
This is not simply a demonstration of a coffee dripper.
It is an opportunity to see how a Japanese coffee professional thinks about brewing.
ORIGAMI “sabi” Makes Its Coffee Show Debut
Alongside the PINN demonstration, the ORIGAMI Dripper S “sabi” will make a special appearance at this year’s International Coffee Exhibition.
The limited-edition color is inspired by “sabi-tsuchi,” an iron-rich clay traditionally used as a base coat for Kiso lacquerware. ORIGAMI’s manufacturing partner developed the color using a soft cream tone inspired by sabi-tsuchi, combined with a glaze reminiscent of clear lacquer.
Iron particles within the base create a warm, earthy character, while the natural gloss of porcelain adds subtle depth to the surface. The result is a calm and understated expression that evokes the Japanese aesthetic of wabi-sabi. (origami-kai.com)
Because the glaze reacts differently during firing, each piece can have subtle variations in texture and appearance—giving every dripper its own individual character. (origami-kai.com)
At the exhibition, visitors will have the opportunity to see sabi in person and experience how Japanese ceramic aesthetics can become part of the everyday coffee ritual.
Two Perspectives on Japanese Coffee Craftsmanship
The PINN and sabi represent two different yet complementary aspects of Japanese coffee culture.
PINN represents the pursuit of brewing performance, efficiency, and flavor expression.
sabi represents the appreciation of material, craftsmanship, and Japanese aesthetic sensibility.
Together, they demonstrate how coffee equipment can exist at the intersection of function, flavor, craftsmanship, and design.
See the Craft. Taste the Difference.
For coffee enthusiasts, PINN provides an opportunity to explore a different approach to hand-drip brewing.
For baristas and roasters, the live demonstration offers a closer look at how dripper geometry and brewing technique can influence extraction.
For international buyers, cafés, retailers, and distribution partners, the exhibition provides an opportunity to discover distinctive Japanese coffee equipment and the ideas behind its development.
The best coffee tools do more than make brewing easier.
They help us understand coffee better.
At this International Coffee Exhibition, Yasuo Ishii will bring the philosophy of LEAVES COFFEE ROASTERS to the stage, demonstrating how thoughtful design, Japanese craftsmanship, and a deep understanding of coffee can come together in a single cup.
