POLI Solera Grappa<br/>Crafted with the traditional Solera aging system—an innovation from Spain—this Grappa blends several grape varieties from Veneto with a secret recipe cherished by POLI’s founder. The bouquet is filled with vanilla, chocolate, and coffee bean aromas, while the palate unfolds with ever‑changing layers of flavor. A spirit of surprise, joy, and remarkable complexity.<br/>POLI’s Solera system begins with seven oak barrels in a single row. Each year, another row of seven barrels is added above the first. Over 14 years, the system expanded to 14 rows, totaling 98 barrels. Since 2015, bottling has begun from the bottom row, but only partially: the emptied space is refilled by the row above, and so forth, while the top row is replenished annually with seven barrels of Grappa aged at least 18 months. This intricate cycle ensures that the bottom row grows older and more complex with time, and each extraction yields a distinct, unpredictable flavor—the allure of the unknown is what makes this Grappa so captivating.<br/>Tasting Notes: Cocoa beans, vanilla, chocolate, medium‑roast coffee, subtle woody tones; pronounced sweetness, round and full body, with intriguing hints of dried citrus peel and dried fruits upon careful sipping.
