Entering its second year, the &quot;Brewer&#39;s Heart&quot; project presents a sake voted on by Taiwanese consumers, supervised by Taiwanese female brewer Chen Xiao-Rou, and crafted at Obama Brewery in Fukui, Japan. The &quot;Brewer&#39;s Heart 2026 Muroka Nama Genshu&quot; perfectly achieves our original vision: an elegant, clean, and crisp food-pairing sake.<br/><br/>Brewed with 100% Fukui Gohyakumangoku rice and FK801 yeast (17% ABV), it features a sophisticated, steady aroma of apple, melon, pear, and white peach. The palate offers beautiful acidity and a slightly dry profile, showcasing a robust body with the complex layers typical of unpasteurized sake. The finish is refreshingly crisp and impeccably clean, leaving only a subtle umami and a pleasant hint of bitterness from the high alcohol content. We hope Taiwanese sake lovers will enjoy this sincere creation!
