Jassarte is a handcrafted wine, its unique characteristics from a single vineyard making it impossible to replicate, representing both antiquity and innovation. It is harvested from a complex Campo Giardino field blend from a single vineyard, comprising 30 local and Mediterranean red grape varieties. The deep soil, formed by river deposits, is primarily sandy and clayey, rich in pebbles, and benefits from a Mediterranean climate that is dry and windy. Grapes are harvested according to their respective ripening times. It is made using natural winemaking techniques, aging the unfiltered wine for two years in old oak barrels with lees (used for clarification), stirred weekly, followed by one year of bottle aging. Upon opening, a variety of floral and fruity aromas unfold, gradually awakening with decanting, as each grape variety reveals its aromatic characteristics in successive waves. On the palate, it is complex, yet the concentrated fermentation and aging process results in a perfectly integrated aroma structure. The finish is complex and lingering. Like the Campo Giardino vineyard weaving a magnificent and breathtaking symphony, each movement a unique and complex melody. Recommended serving temperature: 18°C (64°F). After opening, it is recommended to wait a while to carefully savor the wine's vitality and experience its evolution in the glass.
