Jassarte is a handcrafted wine, its unique characteristics from a single vineyard making it impossible to replicate, representing both antiquity and innovation. It is harvested from a complex Campo Giardino field blend from a single vineyard, comprising 30 local and Mediterranean red grape varieties.<br/><br/>The deep soil, formed by river deposits, is primarily sandy and clayey, rich in pebbles, and benefits from a Mediterranean climate that is dry and windy. Grapes are harvested according to their respective ripening times.<br/><br/>It is made using natural winemaking techniques, aging the unfiltered wine for two years in old oak barrels with lees (used for clarification), stirred weekly, followed by one year of bottle aging.<br/><br/>Upon opening, a variety of floral and fruity aromas unfold, gradually awakening with decanting, as each grape variety reveals its aromatic characteristics in successive waves.<br/><br/>On the palate, it is complex, yet the concentrated fermentation and aging process results in a perfectly integrated aroma structure. The finish is complex and lingering.<br/><br/>Like the Campo Giardino vineyard weaving a magnificent and breathtaking symphony, each movement a unique and complex melody.<br/><br/>Recommended serving temperature: 18°C (64°F).
