Characteristic
Trebbiano Spoletino is a white grape variety originating in central Umbria, with a long history but only recently regaining prominence. Primarily grown in the Montefalco and Spoleto areas, its older vines are mostly self-rooted, with some still employing the traditional "vite maritata" cultivation method, where the vines grow attached to maple, elm, or ash trees rather than trellises or wire. The variety itself exhibits high vigor and thick skins, strong disease resistance and climate stress tolerance, maintaining good acidity and fruit integrity even in hot, dry years.<br/>Alcoholic fermentation is carried out in earthenware pots, followed by nine months of aging in earthenware pots and unbaked oak barrels, and then another nine months of bottle aging to preserve the varietal's original aromatic characteristics and unique linear structural tension. The aroma layers include paprika, turmeric, white pepper, herbs, chamomile, citrus peel, and dried fruit. The wine is crisp, high in acidity, mineral, and has good finish, making it suitable for further bottle aging.<br/>It pairs well with lentil and grain soups, stewed vegetable dishes, grilled or fried white fish, mussels and clams, and soft cheese.
