The selection of Pinot Grigio from the Friuli region in northern Italy well demonstrates the famous brewing technology of the region and more skillfully integrates the production concept of orange wine. Carefully cultivated in soil rich in alluvial stone, gravel and sand and harvested in early September. The grapes are gently pressed and then subjected to low temperature (about 8C) and cold maceration of the grape skins - similar to how orange wine is made. This step helps extract its characteristic color and aroma. Following fermentation at 17-18C, the wine rests unfiltered until spring at around 12-13C, developing a softer, more complex structure. 3.5g/L residual sugar content, it is recommended to taste at 8-10C. It exhibits the unique copper hue of the Pinot Grigio grape, which is a distinctive feature of the orange wine making method. The complex and fresh nose combines notes of dried rose, honey, cinnamon and exotic fruits, and the palate is firm and smooth, almost creamy in texture, with a sweet honey flavor. Ideal to accompany dishes such as fish dishes, shellfish appetizers, risotto and vegetable pies, this Pinot Grigio Blush is a wine that retains traditional qualities while adding innovative flavours.
