Characteristic
Aromatic Malvasia (Malvasia di Candia Aromatica) is a high-quality white grape variety mainly grown in the Colli Piacentini Piacenza Valley region.
A branch of the Malvasia family, it can also be grown in a few areas in the Lazio and Lombardy regions.
Its aroma type and sweetness are often compared with aromatic white grape varieties such as Moscato and Gewürztraminer. It is also called "Malvasia a Sapore di Moscato" (Malvasia a Sapore di Moscato); but its characteristic spicy aroma And tropical fruit aromas are the rare features of the two aforementioned wines. Malvasia di Candia Aromatica is usually made into high-priced white wines or sweet wines with adult potential.
After harvesting, the skins are lightly pressed and macerated at low temperature, and then fermented in high-pressure barrels with selected yeast at low temperature of 12-14C until the required bubble pressure is obtained, thereby maintaining the unique aroma of the grape itself. The sweet aroma of abundant tropical fruits such as citrus, lychees, and ripe apricots, the fresh aroma of white flowers, and the aftertaste of honey are cleverly transformed into a slightly sour taste "like eating an apple." The taste is sweet but not cloying. The residual sugar content is 60g/L, and the suitable drinking temperature is 6-8C.
The wine is golden in color with fine bubbles. Slightly lower alcohol concentration, perfect as a party starter. It can also be paired with desserts and spicy cheese.
