"Ascend" (Deng Gao)—part of ABAS’s Heritage Series—symbolizes the aspiration to reach new heights in future development. It also embodies the vision of the ABAS Distillery Story House: that through the passing of the torch from one generation to the next, the art of distilling will be elevated in every respect, lifting the flavor profile of the sorghum spirit to a new level while showcasing the pure sweetness of grain and the distinctive aroma of sorghum.<br/>Although this spirit boasts a potent 75% ABV, it lacks the harsh, stinging sensation often associated with such high alcohol content. Instead, it offers subtle notes of *qu* (fermentation starter) and longan fruit; upon closer inspection, one detects the sweetness of fruit and starch. True to ABAS’s description, the flavor is defined by the sweet aroma of steamed sorghum rice, delivering a pure, unadulterated taste experience.<br/>Upon the first sip, the high alcohol content is imperceptible, as the palate is immediately captivated by fruity sweetness and a restrained *qu* aroma. As the spirit goes down, a lingering sweetness dissolves on the tip of the tongue, accompanied by a rich, oily mouthfeel that coats the tongue and oral cavity. After each small sip, a delicate, long-lasting sweetness reminiscent of longan fruit remains; the spirit is free of off-flavors, offering a delightful and intriguing tasting experience.
