Malvasia di Candia Aromatica is a high-quality white grape variety primarily grown in the Colli Piacentini valley region, known as the Malvasia family branch. It can also be found in some areas of the Lazio and Lombardy regions. Its aromatic profile and sweetness are often compared to aromatic white grape varieties like Moscato and Gewurztraminer, earning it the nickname "Malvasia a Sapore di Moscato" (Malvasia with a Moscato-like flavor). However, its distinctive spicy and tropical fruit notes are characteristics less commonly found in the aforementioned varieties. Malvasia di Candia Aromatica is typically used to produce high-priced white wines with aging potential or sweet wines.<br/><br/>After harvest, the grapes undergo a gentle pressing and cold maceration on the skins, followed by fermentation at low temperatures (12-14°C) in high-pressure tanks with selected yeast until the desired level of effervescence is achieved, preserving the grape's inherent aromas. Abundant tropical fruit aromas such as citrus, lychee, and ripe apricot, along with fresh white flower scents, and a honeyed finish, transition seamlessly into a slightly acidic taste, often described as "apple-like"; The taste is sweet without being cloying, with a residual sugar content of 60g/L. It is best served at a temperature of 6-8°C.<br/><br/>The wine has a golden hue with delicate bubbles. Its slightly lower alcohol content makes it an excellent choice as an aperitif for gatherings. It also pairs well with desserts and mildly spicy cheeses.
