Brendan & Laura Carter, a husband-and-wife duo and passionate winemakers, are deeply committed to Australian terroir and viticulture. Their mission is to showcase Australia’s unique landscapes through wine while preserving the land’s rich history, which spans thousands of years.<br/><br/>This passion led them to establish two wine brands. When Brendan founded his sustainable winery, Unico Zelo, in the Adelaide Hills, he focused on cultivating drought-resistant grape varieties, aiming to minimize resource consumption and irrigation needs.<br/><br/>Following the success of Unico Zelo, the Carters embarked on a new venture—Applewood Distillery—where they champion local ingredients, supporting regional farmers and Indigenous communities through their craft spirits.<br/><br/>What Does 'Unico Zelo' Mean?<br/>In Short: Unique Zeal<br/>Of course everyone thinks we do 'Italian Wine' because of the name, our bad...<br/>The idea behind the name was that we felt at the time (in 2012) there were very few people focussing on making Australian Wine for Australian People in a way that would last generations. While we're very happy to admit we're not the unique in this anymore, it informed our choice of name for the winery at the time: a 'Unique Zeal' to make a meaningful contribution to the world of wine, as an unashamedly Australian producer.
