In the cellar they are destemmed and placed in stainless steel tanks where fermentation and maceration take place at a controlled temperature. The wine is then aged in small and medium oak barrels for at least 12 months.<br/>Ageing: in French oak for about 12 months.<br/>Yeast: selected yeasts
