**Grape Variety : 100% Chardonnay In 1816, the Jafferlin brothers purchased a wine cellar dedicated to supplying wine for the local church and established the wine company Maison Jaffelin. To showcase the flavors of Burgundy, Maison Jaffelin collects grapes from various vineyards throughout the region to produce outstanding wines that have captivated connoisseurs around the world. Notably, the winemaker at Jaffelin is a young woman who grew up in Burgundy and has gained experience at several prestigious wineries, including Méo-Camuzet and Bouchard Père & Fils, giving her a solid foundation and exceptional winemaking skills. **Terroir:** This wine typically comes from vines growing on the slopes, where the vineyards exhibit remarkable diversity due to various geographical positions. The clay-limestone soils and shallow rocky terrains of the Côte d'Or provide an ideal environment for Chardonnay, which is a grape variety that adapts well to its terroir, leading to some of the finest white wines in the world from Burgundy. **Winemaking Technique:** The grapes are hand-harvested and then undergo direct pneumatic pressing. After alcoholic fermentation, the wine is transferred to cellars at Notre-Dame de Paris, where it ages for 11 months in used oak barrels. After clarification and filtration, the wine is bottled, with approximately 10% new oak barrels used during this process. **Wine Quality:** This wine presents an elegant pale yellow hue with a hint of gold. Its pure aromas fill the nose, featuring notes of yellow fruit and citrus.
