Low Gluten Number One Uni Wheat Flour is a special grade of flour that is milled from center of wheat. It has low ash. It is white and fine and its protein content is 9.5%-10.5%. It is suitable for steam products that rise well. Its texture is fine, soft and elastic, cookies are fine and crisp.
Application for making cakes, Chinese steamed bread, cookies, and dried pan cakes.
