Characteristic
The foundation of this sparkling wine is an assemblage of Pinot Blanc, Chardonnay, and Pinot Noir blanc de noir varieties. It has a vanilla-cream bouquet and a fresh fruity taste with rich, refreshing effervescence.<br/><br/>It is made using the traditional method of secondary fermentation, known since the 17th century when a monk named Dom Perignon discovered the technique of producing sparkling wines. This method has been preserved and is still used today as the classic French method for making sparkling wines. In this process, the sparkling nature of the wine is achieved through secondary fermentation using noble yeasts, which creates a natural CO2 pressure.<br/><br/>In our case, the fermentation takes place in individual glass bottles (traditional method, known as Methode Traditionelle), making each bottle of sparkling wine truly unique. Our sparkling wine matures and refines for at least 18 months in bottles stored on original riddling racks until the final stage, where the yeast sediment (the "depot") is removed – through disgorgement by freezing the bottle's neck in an ice bath, which takes place entirely at our winery. After the frozen yeast is expelled, the missing volume is replenished with the so-called dosage liqueur. The dosage liqueur may be a mixture of wine, must, sugar, and sulfur dioxide to stabilize the wine, or sometimes a spirit, all in various proportions – each winemaker guards this combination as a secret since it can significantly influence the final style and taste of the sparkling wine. The bottle is then sealed with a natural cork and secured with a wire cage.<br/><br/>We honor traditions, and our goal is to offer unique and beautiful wines with a soul.
