Characteristic
The "Ittō Sankken" series from Sakeroku Sake Brewery, Ehime, is back! The name "Suimouken Daiginjo" is derived from a Zen saying in Japanese tea culture: "Keitoku Dentouroku: even a sword that can cut a hair must be carefully maintained." (This refers to an incredibly sharp sword that can slice a single hair with just a breath. While the Suimouken is exceptionally sharp, using it inevitably causes some wear, so even a sword that can cut a hair must be carefully maintained to keep it in prime condition.)<br/><br/>"Suimouken Daiginjo" boasts a sharp taste that can cut through even the finest hair, reflecting the meticulous brewing process. It uses 100% Yamadanishiki rice, and unlike typical distilled spirits made from molasses, it employs distilled alcohol made from rice, ensuring a consistent aromatic profile throughout.
