**RP 86 / WS 90 (Ratings)** <br/>**Saint-&#201;milion Grand Cru Class&#233; (Classification)** <br/>**Grape Varieties:** Merlot, Cabernet Franc, Cabernet Sauvignon <br/><br/>The first part of the castle&#39;s name, Balestard, is named after a clergyman from the medieval era of the Saint-&#201;milion church, while the latter part, La Tonnelle, comes from an ancient stone tower that still stands in the center of the vineyard. The history of this estate traces back to the 15th century when the poet Fran&#231;ois Villon recorded its history and deeds in her poetry collection. This part was later printed on the wine&#39;s front label, becoming its unique mark. In 1923, the estate was sold by Bertauts-Couture to Mr. Berthon, who, for the following 30 years, was managed primarily by his son-in-law, Roger Capdemourlin. Subsequently, the estate belonged to the Capdemourlin family. The Capdemourlin family has resided in Saint-&#201;milion for five centuries and has long been passionately involved in wine culture. For the past decade, the management of the estate has fallen to Mr. Jacques Capdemourlin, Roger&#39;s son.<br/><br/>**Terroir:** <br/>Established in the 15th century, the vineyard covers 10.6 hectares, consisting of 70% Merlot, 25% Cabernet Franc, and 5% Cabernet Sauvignon. The vines are over 33 years old, with a planting density of 6,300 vines per hectare. Hand-harvested grapes are sorted using perforated bamboo baskets. Fermentation occurs in 50% stainless steel tanks, lasting at least three weeks depending on the vintage, followed by aging in oak barrels for 15-18 months, with an annual production of 55,000 bottles.<br/><br/>**Wine Quality:** <br/>The wine features aromas of licorice, black cherry, roasted herbs, and earth. The core showcases notes of black plum, raspberry jam, and sweet tobacco, accented by hints of woody spices and licorice.<br/><br/>**Food Pairing:** Pan-seared ribeye steak, braised short ribs.
